Straddling the Bosphorous between Asia and Europe, Istanbul dining options run from international cuisine at high-end hotels to native fare at Turkish cafeteria-style bistros called lokantas. Kebabs, a Turkish staple, are found throughout the city, with meat -- frequently lamb -- in chunks on skewers. Lamb, ground or in chunks, is also served stuffed into pita rounds. Vegetables, grains, and seafood are prominent in Turkish cuisine, with fresh fish often grilled with olive oil and lemon. Garlic, sage, oregano, cumin, and yogurt, yogurt, yogurt, are key in many dishes. For dessert, phyllo pastry with honey and chopped nuts in the form of baklava is popular, along with puddings, and rice dishes. Breakfast at hotels, modest to lavish, often involves goat cheese, sliced tomato, cucumber and olives, with fresh baked bread. Develi Restaurant, one of Istanbul's oldest kebab restaurants, is known for great views and spicy dishes. For more formal dining, Tugra -- in the historic Ciragan Palace with a showstopping view of the Bosphorous -- specializes in Ottoman dishes including beef cooked in vine leaves. Balikci Sabahattin is known for seafood, Galata House for Eastern European Cuisine, Sarnic for French, and Zencefil for vegetarian delights. Despite this being Muslim territory, beer, wine, and other alcoholic libations are easily ordered at many restaurants. Lunch tends to be from noon to 3, dinner from 7 to 10 p.m.
